Summer is so very close (yippee), and for me, that means swapping warm, wintry food, for loads of huge, tasty salads and simple veg-packed meals. I’m trying to eat a little healthier at the moment (in order to get my body feeling a little healthier and more energetic), so I’ve been scouring Pinterest, in order to find some really delicious-but-healthy foodie ideas to try out this summer. I came across so many recipes that I’m seriously lusting after, so thought I’d share a few of my favourites, for those of you looking for healthy, summery food ideas.
Coriander and Lime Chicken Fajita Kebabs
These kebabs are a refreshing take on your usual fajita kebabs – the flavour combinations are so light and summery, and would make a perfect, healthy barbeque option.
Honey Ginger Tofu Stir Fry
A perfect recipe to knock up when you’ve got veggie friends to visit. The combo of honey and ginger, with that caramelised tofu make it a winner in my books.
Courgette Ribbon Salad
Want something light, and delicate, but also filling? Courgette is pretty much a constant staple in my fridge – it’s amazing for creating really wholesome, filling meals that aren’t too heavy on carbs. And this recipe sounds pretty much perfect.
Grilled Chicken with Pineapple Avocado Salsa
I’m not usually too big a fan of mixing sweet and savoury, but I really love the sound of this recipe. The combination of pineapple and avocado is so unusual, but sounds dreamy. Plus, how good would this look served up at a barbeque?

Chickpeas are big fave of mine – you honestly can’t go wrong with a simple chickpea salad. It goes with near enough anything, so if you haven’t got all the ingredients, then just mix it up with whatever salad or veggies you have got, and it’ll work, I promise you.
Courgette Pesto Noodle Salad
Spiralised courgette (or courgetti) is all the rage at the moment, but I’ve not seen many people serve it up like this, raw and simple. But it absolutely works. The raw courgette makes for a crunchier, fresher version of cooked courgetti and the pesto adds a real kick of flavour. So delish!
