Light Bites – Salads

Fancy eating something a little lighter this time of year? Me too!
Salads can be far from limp ice berg lettuce with a slice of cucumber and tomato (c’mon we’ve all been there and it’s so disappointing)!
These recipes are fresh, tasty and full of crunch. Varieties of ingredients = flavour, making them exciting to eat.

Here are some delicious vegan summer salad recipes that I cannot get enough of recently…

Most of the recipes are filling enough to be a main course and not always just a side dish or second thought, which is what I really like (plus the fact that they all taste soooo damn good)!

What salads are you eating at the moment? We would love some more ideas :)
