A Winter Warmer: The One Pot Chipotle Chilli

DSC_0191With Dia De Los Muertos (day of the dead) just around the corner here is a heart warming one pot dish to get that fire in your winter belly.

This dish is one that everyone can enjoy. It’s simple to make and easy on the cleaning.

The main ingredient for this dish is Bulgur wheat, a whole grain that is high in fibre and low in fat. It’s perfect to replace meat and makes this a well balanced healthy and full flavoured dish.

I’m a great lover of spicy Mexican food and at the moment I can’t get enough of the smoked Jalapeño chipotle, these aren’t the spiciest chillies, so those that aren’t as confident with spicy food can still enjoy the rich smokey flavour, you can add as much or as little as you like depending on how hot you like it. As Marilyn would say, I like mine ‘real hot’.

And for those who aren’t Vegan or those who want to indulge you can add one, two or all of these extras : soured cream, salsa, cheese, nachos or guacamole.

This dish is perfect for freezing. It serves 4/6 but I make it for 2/3 and we have leftovers with salad for lunch the next day. You can also substitute any of the veggies for what you have in the fridge so courgette, carrot and chickpeas or squash, peas and butter beans the list of combinations are endless.
